Successful Weekend of Partying, Guilt Free!

Friday Night was Happy hour with girl friends. I sipped on one very large tumbler of Sprite Zero with a little Diet Cranberry Juice......

.......followed by lots of water! Snacked on raw veggies and a few other low point options.

Then Mike and I headed out to eat at our favorite Neighborhood spot for dinner. Lots of the regulars were there and we bellied up to our usual spots at the bar for some dinner, laughs and live music.

I successfully drank water and coffee with my dinner, and left feeling really good.

Saturday morning I was running late for my coffee date at my dad's house with my dad and brother. When I opened the fridge, I saw the taco meat that needed to be eaten, so I heated it up, ate it too fast, grabbed a banana and headed out the door. I guess I was just thinking...protein and quick.

Late in the afternoon, lunch was the last of the taco toppings (I really hate to throw out food) topped off with a Spicy Black Bean Burger (since I finished off the taco meat for breakfast....weird).

Saturday night we had a Surprise 50th Birthday Party to go to. I was really excited for the party. This is a childhood friend of mine with several siblings that I hadn't seen in many (20?) years. I had no idea who was invited, how many we're invited, or what type of food and drink to expect.

We had a GREAT time! It was so fun to see some of her siblings I hadn't seen for so long! It was one of those nights where we kept introducing ourselves to different people and finding odd connections all night long! I was so wrapped up in chatting, me drinking bottles of water along with one diet coke, while everyone else seemed to be enjoying beer, wine and sangria, didn't even phase me! Yay!

Food options were plentiful with BBQ meats and lots of fruit and raw veggies to snack on too!

I was very aware of the large birthday cake, yummy looking cupcakes, and peanut M&M's (MY FAVORITE!) that were surrounding me. But I focused on the people and the conversation and the food and beers became lost to me in the background.

I think if I can go to Happy Hour with the girls followed by dinner and live music at a bar with my husband on Friday night, and a large Birthday Party with a bunch of fun people and deck with a large tub of cold beer on a Saturday night, and not have one drink, I can DO this.

Breakfast Sandwich to Satisfy All the Tastebuds!

Sweet, Salty, Creamy, Warm and very filling!

Toasted Light English Muffin 3 PPV
1 Laughing Cow Cream Cheese Wedge, divided in half. 1 PPV
1 T Raspberry Jam, divided in half. 1 PPV
1 link Turkey Sausage, sliced lengthwise in half, then cut into four pieces. 1 PPV
4 Egg whites, cooked, divided in half. 1 PPV
Total = 7 PPV




Toast the English muffin and top with Cream cheese spread, then jam. Then nestle the turkey sausage pieces down into the spread, and top with cooked egg whites. So good!





Mike was gone most of the day working on a project at his sisters house. So I was on my own. On my agenda? Grocery Shopping and exercise. I decided to take both dogs for a short walk. When I got back, I thought Tucker and I would go for a run together. Well, we hadn't done this before, and the whole running and stopping to sniff didn't go well. We got in about a mile or so when I decided to bring him back home.

I had sent a text to a few friends to see if anyone was up for a walk, and one friend said she was in! Yay! When we met up, she told me a route she takes, and I wasn't in any hurry to get home, so off we went. I ALMOST DIED! I think I was hungry and hadn't drank enough water yet, but the closer we got to home, the dizzier I got! I made it in the house alive and chugged a bunch of water and jumped into a cool shower. Then I drove the route.

6.6 miles! Nice job girls!

After my shower I enjoyed more water and a nice Fruit Buffet, that included a Strawberry Smoothie.....

Dinner?
New recipe!

I thought this recipe turned out REALLY, REALLY good, but I didn't realize Mike wasn't crazy about cooked spinach. I would totally make this again though and maybe stuff Mike's portion with broccoli?

For the outside I used Panko bread crumbs mixed with a little taco seasoning. This varies from the recipe a bit.




I rarely make corn, but the chicken was stuffed with spinach and Pepper Jack cheese, and it sounded like the perfect combo along with a side salad.

  1. MMMMMM! That chicken recipe looks so good! Gina at skinnytaste.com makes a rolled chicken breast with zucchini, maybe Mike would like that one. Godd for you on your 6 miles walk..in the heat!!! You Rock!

  2. You can do this, Julie! What an awesome job you did this week. Sounds like you have determination, too! That whole dizzy thing you did on your walk is what we call bonking. Not good. Be sure to eat and drink water before endurance exercises that will take a couple of hours like that. We learned all about bonking on the AIDS ride. It's worse on a bike because you can fall off! You're doing great!

    1. Now I have to Google bonking. It was really weird, because I know I'm in Kinda sorta decent shape and I couldn't figure out why that was happening. Endurance??

    2. You're blood sugar got too low. Has nothing to do with being in shape, it's all about blood sugar. It's a good idea to read about it. It happens to everyone that does endurance type training once, but usually not twice.
