Girls Night Out! No Drinking!

It really wasn't that big of a deal. I had a great time getting together with some High School friends I hadn't seen in a really long time. The hostess had an amazing spread of food with super healthy and low point options, and the conversation and laughs and memories were great!

Lots of fruit, a couple of different salads, shrimp, cheese and crackers ( I skipped those), chips and gauc (didn't even tempt myself with one).......And I bellied up to the bar by the fruit!!





.....and I took a veggie and hummus tray and Cookie Butter for every one!!




I took this for my beverage, but also drank lots of water, while the girls enjoyed their wine and beer, those lushes.... (no judgement, just envy)



We seem to have a lot of socializing on the calendar these next few weeks.....I know......Surprise! I am assuming most of my blog will be filled with how I decide to deal with it. Hope I don't get too cranky! Wait....MIKE hopes I don't get too cranky......yeah, that makes more sense. It did feel good though to drive home last night, knowing that I had a good time, stuck with my plan, and stayed on track.

Here's yesterdays eats......

Breakfast....egg white omelet topped with salsa, English muffin topped with Laughing Cow (Cinnamon) Cheese Wedge, and strawberries. 5 PPV.




Lunch was out with my BFF from High School. (Lots of reminiscing this week!) We were going to Houlihan's, so I checked out the menu and nutritional info online before I left the house. Weight Watchers has some kick ass advice, and this is one of them! Lots of restaurants have their nutritional info online, and you can decide what you're going to order before you even get there! That way you aren't tempted by what others order, or what's on the menu! I found out the Chicken Tortilla Soup was 5 PPV, and the House Side Salad with Balsamic Vinaigrette was 5 PPV. Perfect! They both were really good too!




I wasn't sure what kind of food would be at Girls Night, so I ate this before I left the house.....Chicken tenders, tzatziki sauce, carrots, and a Greek Yogurt Bar. (My chicken tenders were spicy!) 6 PPV.





For the chicken tenders, I just sprinkled a little Cavender's Greek Seasoning (low salt) on them, and fixed them in my grill pan with a little Olive Oil Cooking Spray. Yum!





I was looking for quick and easy, and I got quick and easy and tasty!

Meatballs For Breakfast!

Yip....more Chicken Meatballs. Now I have had them chopped up in a salad, on a meatball sandwich, and now, chopped up and added to my scrambled egg whites! This was possibly my FAVORITE! I love my Kraft 2% Sharp Cheddar Slices. They melt really well and have a great, strong cheese flavor. So I scrambled the egg whites, added two chopped up meatballs, then I broke the cheese slice into several pieces and put it on top. Then I set a lid on top of it to melt it a little, and topped with a bit of salsa. I added two slices of toast spread with Laughing Cow (Strawberries and Cream) Wedges. Uhhhh........yum.

I tried this for the first time. It tasted like a candy bar! It was 5 PPV. I probably over did on the bars and sugar today. Needed more veggies. This was really, really good though.



Dinner was Rotisserie Chicken Salad Wraps made with Light Mayo and grapes. We had Baked Zucchini Sticks on the side with marinara sauce.

Pizza and Ice Cream for Breakfast! Guilt Free!

It all started with my morning smoothie after walking club. (On the way home from walking club, I ran a mile.) The thought started as a smoothie with some frozen bananas in it. Then I remembered I had seen a lot lately on Ice Cream made out of frozen bananas. The most recent website I read about Banana Ice Cream was here. It's just frozen fruit.......blended. First I added 1 1/2 frozen banana's, in chunks, then 4 large strawberries, then a little Truvia, then some Coconut Milk, which I bought a while back, not knowing what I would use it for.

My Strawberry Banana Ice Cream was perfect and cold and fresh!





It was the perfect treat after meeting with my Walking Club! Yes, dogs are Welcome, and we do have one four legged member! No, I do not walk (or run) barefoot.





This is another Trader Joe's find. Now I just need to find some more recipes to use it in! It was great to mix with my frozen fruit for Ice Cream!




About an hour later, I knew I needed more than just the fruit in my smoothie, so I had the one piece of pizza that was left! 5 PPV.

I have talked a little bit about my 8 week Bootcamp. I really did like having a routine, having specific exercises, how many reps and how many sets. I wasn't sure what I would do at the end of the 8 weeks, but I knew I liked the weight lifting, and I really think it was what helped me reduce inches and look more toned.

I found this online Bootcamp, a few weeks ago, and signed up as soon as I read a little bit about it. It starts this week, so my Bootcamps are overlapping a bit, but I can handle it......or die. I got started on it right after lunch. I wasn't sure what to expect, or how hard I would push myself with no one else in the room, but I was surprised to find I did push myself. I wouldn't be doing myself any favors if I didn't. I am sure being in Bootcamp with the other people, and pushing myself in the group setting, made me realize I could do more than I thought I could. I can lift more than I thought I could, (on some things), and I can hold a plank longer than I realized! :)

I am certain with Monday nights Bootcamp, Tuesday Mornings Walking Club, then my little run and afternoon at home Bootcamp, then Wednesday Mornings Bootcamp, I should be dead by Wednesday Night. :)

Apple Sandwiches

This is a great way to get your "Apple A Day" in with a little fun!

Slice your apple so you have four good slices.





Core the apple and fill a Tablespoon with your favorite Spread! Peanut Butter, Almond Butter, Laughing Cow Cheese Wedges, or this ridiculously delicious new Trader Joe's find, Cookie Butter! You can also add raisins, any other dried fruit, granola, nuts or drizzle honey on top!

I made this over the weekend and REALLY liked it! I put it in the crockpot Friday night so I would have an awesome hearty breakfast to start my weekend off!

One morning I topped it off with a sliced banana and some Better n Peanut Butter.




Or you could top it off with Dark Chocolate chips!






Or how about Cookie Butter and sliced strawberries??

Online Bootcamp

My 8-Week Bootcamp will end this week. I am so glad my neighborhood girls asked me to join! I get really bad about remembering different exercises to do, and I get bored. So having someone tell me exactly what to do, and changing things up a bit, was exactly what I needed. It was also nice to have workout buddies!

Ironically, pictures of me were posted on the Bootcamp 360 Facebook page this week! Not my most flattering look! I think this move is called the Lumber Jack? You swing the weight up over your head as you stand up, then swing it down as you squat. It's a bitch!




I don't remember the name of this one, but I learned how to stick my butt way out! Like THAT was a challenge!



As this Bootcamp ends, I knew I needed a new challenge. You know that saying......"A friend of a friend of a friend" kind of thing? Well, this is more a "blog from a blog from a blog" kinda thing. I discovered, through another blogger, that I found through yet ANOTHER blogger, a Bootcamp was being offered online for $25. I signed up! Here is where I found the info for the Bootcamp. The official start day is today, so I am doing my best to do them both this week.

Not a real exciting blog, but lots of variety and some weird choices.

This butter spray is great for just a little taste of butter, and something to make your dry toast, not so dry. Just a few sprays does the trick.

It is also great on Popcorn!

After Bootcamp, I really wasn't hungry, but they say you're supposed to eat SOMETHING after you workout. A few bites of turkey burger, some fruit and veggies. Total 4 PPV.
